Christmas Wreath Pancake Platter

A Christmas Wreath Pancake Platter -- perfect for Christmas morning! :)
The other day I was making shaped pancakes and I had leftover batter.. and why not use it up?! So we made a Christmas Wreath Pancake Platter :)

To make this pancake platter:
First mix up your pancake mix (homemade or boxed.) Mix it well so there are no bumps.  You will only be need to separate the batter into two bowls for the two different colors: one for red, one for green. Once your colored batter is fully mixed, pour it into a squeeze bottle. You will need more green batter than red.

On the skillet (on low heat) draw the outline of a holly leaf (you can do multiple at a time depending on how big your skillet is). Let it cook until it gets all nice and bubbly. Fill in the holly leaves and let it cook. When your holly leaves are mostly cooked, gently flip them over and let them cook on the other side.  For a reference I looked at my mini holly leaf cutter and hand drew my pancakes to look similar. They don't have to be perfect, just as long as they have the right-ish shape!

With the red batter make some simple circles for holly berries. Draw the outline of the bow with the red batter.  Let it cook until it gets all nice and bubbly, then fill in the bow with red batter. Let it cook almost fully before flipping it.
Arrange the holly leaves on a plate like a wreath. Add holly berries and bow to complete the look! Serve with your favorite pancake toppings and some fruit, bacon and/or sausage on the side. 

The different color greens were not because of the poor lighting and picture quality...or because I had to remake green batter three times due to miscalculating and running low on batter, or because I left some on the pan to long due to a forgetful mind and they got crispy and semi-burnt... They were intentionally planned. That's my story and I'm sticking with it. And it actually ended up looking better! ha! Funny how that worked out :)


This would make a fun breakfast for Christmas morning! You could make the pancakes ahead of time and put them in the freezer, only to reheat them on Christmas morning :)
